00:00Streaming in are the first of many, eager to catch a glimpse of the largest fish market
00:10in the southern hemisphere.
00:12Just walking through the front door, we've been watching it come in and get built up
00:16over the last couple of years, so yeah, great to see it actually finally open.
00:19We're just soaking it all in, it looks really cool.
00:21So many choices, I'm like, my husband and I are trying to decide what to eat right now
00:26and it's hard, so we're going to have to come every day.
00:29It's been a long process, it's been obviously on the table for quite some time.
00:34Yeah, I mean I think it's been a difficult project to get completed.
00:37Initially priced at $250 million, the final cost now sits at around $830 million.
00:45These fish markets are well placed to stand up to the biggest trading days of the year.
00:51This building is purpose built for massive crowds.
00:54By one o'clock today, the building had reached maximum capacity.
00:59There are 42 retailers in the new market, of which 30 are open for business today and
01:04people will be able to enjoy extended operating hours up until midnight on the weekends.
01:10The fish market's chief executive says consumers won't pay more for seafood.
01:15It's all about supply and demand, so it's got nothing to do with the building in terms
01:19of the prices that are being sold and bought at the market.
01:23Those wholesale prices will continue to be dictated by the market.
01:27It's hoped a new $30 million wharf and ferry project will be operational by next year.
01:32It will be big enough for, like I say, a 100-ton ferry as well as mums and dads that might want
01:37to tie up just for a short while, jump in and get something to eat.
01:40And if the queues are any indication, appetite isn't in short supply.
