00:00It's green, it's earthy and it's quickly becoming Liverpool's new go-to drink, matcha.
00:06A finely ground Japanese green tea is popping up on cafe menus across the city
00:11and local businesses say demand has never been higher.
00:14Known for its health benefits, matcha is rich in nutrients such as vitamin C
00:18and many say it gives a calmer, longer-lasting energy boost than coffee.
00:24It's a trend being driven by younger generations, especially Gen Z,
00:27who are seeking alternatives to traditional coffee culture.
00:30Tea is one of the most commonly consumed beverages worldwide, second only to water.
00:36I'm on a mission to find the tastiest matchas on offer right here in Liverpool.
00:42Cornhill Coffee, which is located right by the Baltic Fleet,
00:45is a family-owned business run by a mother and daughter.
00:47They sell coffee, baked goods, fresh sandwiches and a selection of matcha too.
00:51I've gone for a blueberry one today, so let's give that a taste test.
00:57Oh, that is good.
00:59That is really, really delicious.
01:03If you're not sure about matcha, if it's your first time,
01:06or you've had it before and you're not into the bitterness,
01:08sometimes it even has a slight umami-like savoury taste,
01:12then get it flavoured, no judgement here.
01:15I love it.
01:15I have long been a fan of matcha, so I am delighted in its rise in popularity,
01:22although they're not cheap, so I'm not sure my wallet is quite so thrilled.
01:26The matcha market seems to be growing,
01:28meaning Liverpool might be sipping on this green trend for years to come.
01:33Unlike regular green tea, matcha is made by grinding whole leaves into a powder.
01:37That means when you drink it, you consume the entire leaf,
01:40giving you more nutrients than a traditional brew.
01:43I've just walked over to St. John's.
01:45I've gone to Cafe Bria, which is just down the side of it.
01:49I've gone for a cherry matcha this time.
01:55Wow.
01:57Oh my gosh.
01:59If you like cherries, that is absolutely gorgeous.
02:02Matches, lovely vivid green too.
02:05Gorgeous, isn't it?
02:06And it's not just about the drink.
02:10From ice creams to dessert, it's becoming a key flavour in the foodie scene,
02:14adding a splash of green to the city's cafe culture.
02:18Iced in Liverpool One is the latest venture of Bean,
02:21located opposite the Odeon in the former Splendid.
02:24They say their matcha's organic ceremonial grade,
02:27which is supposed to be the highest quality you can get.
02:30I went for a white chocolate and raspberry.
02:33I was going to deviate from the fruity ones that I've been having.
02:37There was a salted pistachio one,
02:39but I thought scenes have gone fruity so far.
02:41Continue with that theme.
02:43Let's give it a try.
02:45It's definitely the sweetest one I've had today.
02:47I'm not complaining.
02:49So whether you're after a caffeine kick without the crash,
02:52or simply a splash of colour on your Insta feed,
02:55there's a good chance your next cup in Liverpool might just be green.
02:59.
02:59.
03:16.
