A dish so synonymous with the city that there's a whole day dedicated to it. We are, of course, talking about Scouse.The stew is on restaurant menus around the city all year long. Now, a local eatery is taking it one step further with the most famous local food dish in Liverpool.

00:00Scouse is many things to many different people. Shaping the identity of the city and still
00:08served across Merseyside and at home, ever popular with endless variations. The classic
00:14dish has been an enduring staple here at Marlboyles. They proudly served it for years and for Global
00:21Scouse Day, they're offering a range of succulent Scouse dishes for an entire month.
00:28With the space we've got, we can feed everyone. In one day, we can probably feed about 100
00:33people, but making it a month, we're giving a chance to everyone to try it. Our lads in
00:38the kitchen, Kitchen Brigade, come up with the Scouse menu. So there's all different
00:42versions of your classic Scouse. So you can do a veggie, vegan version. You can have it
00:47as a pie, as a cottage pie. We do even a spicy one with the chorizo or vegan one with some
00:54lentils and beans.
00:56On the menu is classic Scouse as well as blind, Scouse cottage pie and spicy Scouse,
01:02both of which can come veggie. I've gone for the Mars Scouse pie.
01:06Look at all that gorgeous meat in there. Wow. I think this is interesting because people
01:13often eat Scouse with some bread and butter. This is a bit of an alternative to that. Although
01:18I've got this with chips today, you can get it with spring onion mash or chips. I think
01:21I might try the Scouse first without the pie lids on just to get right in there. You
01:27can see the big chunks of meat and veg. Look at that. Oh, it's piping hot as well.
01:38If you haven't had Scouse before or you just haven't had it with either beetroot or brown
01:43sauce, the point of it is, is it's quite a rich dish, really unctuous flavours and the
01:50pickled elements of either the beetroot or the cabbage or the vinegary-ness of the brown
01:57sauce is there to cut through that dip.
02:07Scouse is a dish born out of Liverpool's history of hardship, creative endeavour, and it harks
02:13back to the bustling port days. Scouse was originally a dish whose ingredients were a
02:18mix of cheap and filling food. Originating from the word lobscouse, this was a dish commonly
02:24eaten by sailors travelling across Northern Europe who frequented Liverpool. Over the
02:30decades, the name was ultimately shortened to the version known across the world today,
02:37Scouse. This day, it remains a hearty stew, generally consisting of meat, either lamb
02:43or beef, with potatoes, carrots and onions. Of course, you can't have blind Scouse which
02:48has no meat in it and it's served on the side of course with pickled beetroot or pickled
02:52red cabbage, some crusty bread and some brown sauce.
