00:01Hey everyone, I'm Yuto and today on Sudachi I'm going to show you how to make a refreshing, tangy and
00:06versatile condiment called ponzu.
00:08Let's get started.
00:10First, we're going to pour 2 tablespoons of mirin into a saucepan and let it boil for about 30 seconds
00:15to 1 minute to burn off the alcohol.
00:18It's such a small amount that this will only take a short time.
00:22Tilt the pan occasionally to heat it evenly.
00:25If you want to make your ponzu a bit sweeter, you can increase the mirin a bit.
00:29Ok, remove it from the heat and pour it into a heatproof container.
00:41Next, I'm going to add 100ml of citrus juice.
00:45Here I have bottled yuzu juice, but you can use lemon juice, lime juice or any citrus of your choice.
00:51I opted for bottled because fresh yuzu don't have much juice and they're not in season right now, so they're
01:00expensive to buy.
01:01But of course, this recipe is delicious with freshly squeezed citrus juice if it's accessible to you.
01:07Now, let's add 1.5 tablespoons of rice vinegar and 125ml of soy sauce.
01:14This is Japanese dark soy sauce.
01:18Finally, add a palm-sized piece of kombu dried kelp and 10g of bonito flakes.
01:25That's about half a cup.
01:26These dashi ingredients will add umami and depth to the ponzu.
01:32Give it a gentle shake, then cover and refrigerate.
01:36I recommend letting it rest for at least 24 hours and if you have time, 3 days is ideal.
01:41After it's finished resting, pour it through a strainer to catch the bonita flakes.
01:56You can then transfer it to a sterilised jar or bottle.
02:01Ponzi goes great with fish, meat, vegetables.
02:05It can be used for general cooking, dressings, as a dipping sauce for dumplings and more.
