The salmon fillets are usually seasoned lightly, seared in a hot pan until golden, then coated with teriyaki sauce made from soy sauce, mirin, sake, and sugar. As the sauce reduces, it clings to the surface and gives the salmon rich umami, gentle sweetness, and a polished glaze. The pan frying method helps keep the center moist and flaky while creating lightly browned edges. 00:00I'm you too and today on Stati, I'm going to show you how to make delicious Pan-Fried
00:04Egg Summon.
00:05First, I'm going to prepare some vegetables to serve with it.
00:08This is Chinese spinach and I'm just going to cut it into thirds and remove the roots.
00:18Place the thickest part in a pot of boiling water and set a timer for one minute.
00:24While you wait, prepare a bowl of ice-cold water, ready for later.
00:28After one minute, add the middle part and set the timer for 45 seconds.
00:33This method of staggered blanching helps ensure that no part of the spinach is under or overcooked.
00:39Finally, add the top leaves and continue to cook for 30 seconds.
00:45Drain the water and place the spinach in ice-cold water for a few minutes.
00:49In the meantime, preheat a frying pan on medium and add 1 tablespoon of cooking oil.
00:54While it's heating, putt your salmon fillets dry with kitchen paper and season them with
01:00a pinch of salt and pepper.
01:01This salmon fillet is quite big.
01:04Usually I would use 2-4 smaller fillets, but this looked really nice in the store and while
01:09cold salmon is in season in Japan at the moment.
01:12Cold the surface with 1 tablespoon of potato starch or any starch and rub it over to create
01:19a thin, even layer.
01:29Then add them to the preheated pan with the skin side facing down.
01:33Let that cook for 4 minutes or until crispy.
01:36While you wait, heat a separate pan with 1 tablespoon of butter, and once it's melted, add 100g of
01:44cut asparagus.
01:46Lowerly squeeze the spinach and add it to the pan, then season with salt and pepper to taste.
01:52Stir fry for about 2-3 minutes and then take the pan off the heat.
01:56Make sure not to forget about your salmon while the vegetables are cooking.
02:00Check often to make sure it's not burning.
02:03Okay, I'm going to flip my salmon now.
02:07Fry on the other side for 2 minutes and while you wait, prepare the teriyaki mixture.
02:13Grab a small bowl and add 1.5 tablespoon each of soy sauce, mirin, sake, and 1 teaspoon of
02:23sugar.
02:23Give it a mix and once 2 minutes have passed, pour it into the pan.
02:33Paste the salmon with the sauce until it thickens and becomes glossy.
02:41This looks great, so let's dish up.
02:47I'm starting with a bit of multigrain rice and placing the vegetable across the top.
02:54This is not really how we serve teriyaki in Japan, but I took some influence from western
02:59style one plate dishes for this recipe and the battery vegetables taste seriously good
03:04with the teriyaki salmon.
03:05Place the beautiful teriyaki salmon on top and drizzle with leftover sauce from the pan.
03:16Finish the dish with a sprinkle of sesame seeds and that's it.
