These little popcorn chicken bites will be a huge hit at the family dinner table! In this video, Nicole shows you how to make sweet chili popcorn chicken using homemade sweet chili sauce and a golden panko-coconut crust. Loaded with sweet and spicy flavor, each bite will be a treat for even the pickiest of eaters.

00:00Let's make sweet chili popcorn chicken.
00:02Start by combining unsweetened coconut
00:04with panko breadcrumbs.
00:05Drizzle it with some canola oil
00:06and bake it until it's toasted.
00:08While that happens, cut some boneless,
00:09skinless chicken thighs into one and a half inch pieces
00:12and toss them with a mixture of mayonnaise,
00:14sweet chili sauce, ground ginger,
00:15garlic powder, salt, and onion powder.
00:19Add the toasted coconut mixture to a shallow dish
00:21and add in some cornstarch.
00:22Give that a stir and then take the chicken
00:24from the marinade and press it firmly
00:26into this mixture to coat it.
00:27Place that on a rimmed baking sheet
00:29and drizzle with a little more canola oil
00:31and bake that at 375 until it's golden and crispy,
00:33flipping halfway through, about 15 to 20 minutes.
00:35And while that cooks, you're gonna make
00:37the sweet chili sauce.
00:38It's just a half a cup of sweet chili sauce
00:39with ketchup, soy sauce, and lime juice.
00:41Stir that together and then we're gonna brush
00:43this liberally over the cooked chicken.
00:47Mm.
00:49Flavor is so good, a little sweet and spicy
00:51and it satisfies that fried food craving.
00:54And just like that, I know what my kids
00:55are having for dinner.
