I'm sharing with you the ultimate recipe for Chocolate Cake. This chocolate cake is rich and fudgy. It's four layers, covered with chocolate buttercream and topped with a chocolate ganache.

RECIPE

3 Cups Flour
3/4 Cup Cocoa Powder
2 tsp Baking Soda
200g Butter
2 Cups White Sugar
3 Medium Sized Free Range Eggs
1 tsp Vanilla
1 Cup Buttermilk
1 Cup Hot Water
2 tsp Instant Coffee

In a medium-sized mixing bowl sieve the flour, cocoa powder, and baking soda. Set to the side. In a larger mixing bowl mix together the room-temperature butter and white sugar until combined. Crack in the eggs one at a time beating well in between each addition. Pour in the vanilla and give another mix. Add the instant coffee to the hot water and pour in the bowl along with the buttermilk. Top with the dry ingredients and fold together to form a smooth batter. Pour the batter into a greased cake tin and bake in a 160C or 320F preheated oven for about an hour or until a skewer comes out clean. Leave to cool in the tin for 10 minutes before removing.

Chocolate Buttercream

250g | 1 Cup Butter
375g | 3 Cups Icing Sugar / Powdered Sugar
1/2 Cup Cocoa Powder
30ml | 2 Tablespoons Milk

Beat the butter with a stand mixer or a hand mixer for about 3-5 minutes until pale. Gradually add the icing sugar and cocoa powder beating well in between. For a thinner buttercream incorporate the milk.

Chocolate Ganache

250ml | 1 Cup Cream
250g Dark Chocolate

Break the chocolate up into small pieces and pour over hot cream. Leave to sit for about 5 minutes before stirring. The chocolate should be completely melted. Leave to thicken for 15 minutes before pouring on top of the cake.

Buttermilk Recipe

1 Cup Milk
1 teaspoon vinegar

Mix the milk and vinegar and leave to sit for 5 minutes. The milk should start to look lumpy.

00:04Today I'm sharing with you a recipe for how to make the ultimate chocolate cake.
00:08It's a rich and fudgy cake covered with chocolate buttercream and topped with a decadent
00:13chocolate ganache.
00:14So if you would like to learn how to make it then let's get started.
00:22First we're going to combine the dry ingredients together for the chocolate cake.
00:27The cake flour, cocoa powder and baking soda.

00:41Sift the ingredients together into a medium sized mixing bowl to remove any lumps and
00:47give it a quick whisk so everything is evenly combined.
00:50Set the bowl to the side while we prepare the wet ingredients.
00:58In a larger mixing bowl place in softened room temperature butter.
01:03Make sure the butter is at room temperature so it's easier to mix.
01:07Just remove it from the fridge an hour or so before you need to use it.
01:18Sift out 2 cups of regular white sugar and add to the mixing bowl with the softened butter.
01:24Use a stand mixer, hand mixer or wooden spoon to mix the butter and sugar together until
01:29well combined.
01:31This should only take a few minutes.
01:33You don't need to cream them together so they are light and fluffy, you just don't
01:37any lumps of butter.
01:50When the butter and sugar are well combined we're going to add in the eggs.
01:55Crack in 3 good quality medium sized free range eggs, beating the mixture well in between
02:00each addition so it doesn't separate.

02:10Chocolate cake is always a go to classic but for me my ultimate favourite type of cake
02:14would have to be cheesecake.
02:28After adding the eggs pour in a splash of good quality vanilla extract.
02:32When working with chocolate flavoured baked goods adding vanilla extract really rounds
02:37up the chocolate flavour so don't forget to add it.
02:41A trick I've learnt to get the cake super fudgy is to use buttermilk instead of regular
02:46milk, or plain natural yoghurt would work too.
02:50Just a tip, if you don't have any buttermilk on hand you can make your own with just milk
02:54and vinegar.

02:59Add the buttermilk to the mixing bowl along with a cup of strong hot coffee.
03:04The coffee helps to deepen the flavour and also the colour of the cake.
03:09Don't worry about a strong coffee flavour, you won't be able to taste it when the cake
03:13is baked.
03:14Pour over the dry ingredients and using a wooden spoon fold the batter together until
03:19well combined.
03:21Be careful not to over mix as this will result in a tough cake.
03:25Just fold it together long enough that you don't see any flour.
03:30Pour the batter into a lined and greased cake tin and place into a 160C or 320F preheated
03:38oven for about an hour or until a skewer comes out clean.
03:44Once the cake is baked remove it from the oven and leave to cool for 10 minutes before
03:49removing from the cake tin.
03:51Leave the cake to cool completely before icing.
03:55To make the chocolate cake more decadent I'm going to slice it in half and ice in between
03:59the layers.
04:00For this video I've also baked another cake so in total I'll have 4 layers.
04:06Use a serrated knife to slice the top of the cake off so it's completely flat and slice
04:11it through the middle.

04:31Place the first layer of chocolate cake onto a cake stand and top with a scoop of buttercream.
04:38Use a spatula to spread it out evenly before topping with the next layer.
04:47Use a spatula to cover the top and sides of the cake, then switch to a cake scraper
04:52to smooth out the buttercream.
04:55Place the cake into the fridge for about 30 minutes to an hour until the buttercream has

05:01To make the chocolate ganache break up dark chocolate and pour over hot cream.
05:06Leave for 5 minutes before stirring then 10-15 minutes for it to thicken.
05:12Once thickened pour the ganache over the chocolate cake and use a spatula to push it over the
05:17sides.
05:28Leave to set before serving.
05:34Slice the cake with a hot knife and serve.
